Description

Oat bran in the morning is a warm and filling way to start the day. But this baked incarnation is a whole another animal. Wow. The texture is somewhere between oatmeal and omelet -- warm, moist, mildly sweet with pops of color with every berry bite. Straight from the oven, you will be truly delighted.

  1. Heat oven to 350 degrees F / 176 C. Spritz a 9x13-inch baking dish with olive oil.

  1. Scatter berries in the bottom of the baking dish in an even layer.

  1. In a small bowl, whisk together oat bran, almonds, baking powder, and salt.

  1. In a large bowl, whisk together almond milk, egg, egg whites, erythritol, vanilla, and nutmeg. Whisk oat mixture into milk mixture, then pour it over the berries, shaking the baking dish to evenly distribute liquid and oats.

  1. Bake until firm and pale golden, 35 to 45 minutes. Serve warm, sprinkled with more erythritol, if desired.
