Instructions

  1. Mix all ingredients except blueberries in a bowl.
  2. Spray muffin cups or papers with cooking spray (or place all batter in a 4x6 in. glass baking dish).

  3. Mix in blueberries and bake at 350 degrees F / 176 degrees C for 15-20 minutes. (Alternatively if using a glass dish you can microwave for 8 minutes).

  4. Remove from the oven, cool, and enjoy. Yield: 6 muffins.
