Description

Using almond milk instead of water gives oat bran more richness. Blueberries add delightful interest, but with the addition of the orange zest, this protein-laden breakfast becomes something really special.

  1. Bring the water to a boil in a medium-size saucepan. Mix together and add the salt, cinnamon, erythritol, oat bran, and protein powder. Reduce the heat, and simmer uncovered for five minutes or until most of the water has been absorbed. Add the blueberries, orange zest and almond milk. Bring to a simmer for five minutes or until the oat bran is thick and creamy and the blueberries have begun to pop. Cover and let stand for five minutes, then serve.

Note

Overnight Oats  preparation: To save time, combine all the ingredients except the almond milk, blueberries and orange zest the night before. The oat bran will absorb all of the liquid. Add the almond milk, bring to a simmer and proceed with the recipe.
