Description

This chicken breast dinner has minimal ingredients and maximum taste. Easy to serve with shirataki rice or noodles and a side salad or vegetable dish. Quick and protein-packed!

  1. Season chicken well on both sides with salt and pepper. In a large pan, heat olive oil over medium heat. Add garlic and cook until it begins turning golden, about 2 minutes. Remove with a slotted spoon and set aside. Begin cooking the chicken, in batches if needed. Cook until the chicken begins to lightly brown, about 3 to 4 minutes per side. It will finish cooking through later.

  2. Add all of the meat and juices back to the pan if you cooked in batches. Pour in the vinegars, add reserved garlic and bring to a simmer. Turn heat to medium-low, cover and cook about 5 to 7 minutes more.

  3. Uncover and toss chicken well in the vinegar sauce to coat. Cook chicken about 3 to 5 minutes more or until the sauce has reduced by about half and has thickened slightly. Before serving, sprinkle with parsley and oregano, if using, and season with flaky salt, if desired. Serve in bowls over shirataki noodles, if desired, and spoon the remaining sauce atop.
