  1. Sprinkle the cucumbers with plenty of salt and let sit in a colander draining for about 15 minutes. Rinse and dry between paper towels. Transfer to a salad bowl. 

  2. Whisk together the vinegar, Tamari, erythritol, garlic, ginger, cayenne, and pepper. Add in the sesame oil and the grapeseed oil. Toss with the cucumbers, scallions, and cilantro. Chill until ready to serve.
