Hot Chocolate Mug Cake

Whisk oat bran, protein, erythritol, cocoa, baking powder, and salt together in a bowl; set aside. Add half the chocolate pieces (10 g) and the ghee to a large mug or ramekin, sprayed with cooking spray. Microwave ghee and chocolate pieces at 50% power, stirring often, until melted, 15-20 seconds. Add oat bran mixture, egg, and vanilla to the mug, and mix until smooth and well combined.

Microwave the mug contents at 50% power until it has doubled in size, 20-30 seconds. Sprinkle the remaining chocolate pieces over the cake. Microwave at 50% power until cake is firm but top is wet, 15 to 30 seconds (the cake may rise, but will not overflow). Let the cake rest for 2 minutes, then enjoy.

The timings are approximate. You really need to watch this cake while it cooks. Some people like their lava cake runny, so in that case, you’ll want to decrease times. Some like it firm which requires longer cooking time. Experiment. Either way, it’s delicious.
