Lemon Cloud Pancakes
Description

In a bowl, stir together all ingredients except egg whites until well mixed. Beat the egg whites until they hold stiff peaks.

With a large spoon or spatula, fold whites into yolk mixture, stirring gently until there are no white streaks.

Heat skillet or griddle over medium heat. Spritz lightly with olive oil and spoon out three fluffy ladles of batter. Cover and cook slowly for about 1 1/2 minutes, then turn the pancake over, keep the lid off, and cook for about 30 seconds. Keep pancakes warm in a 250-degree oven until ready to serve. Enjoy with zero calorie syrup, berries, or yogurt. Just add the calories for your garnish.
