Description

These zingy pancakes hardly need accompaniment. But some plain yogurt and fresh berries add to the deliciousness. Don't you just love the texture poppy seeds add? And 50 grams of protein per serving? Shovel them in! Yum.

  1. In a bowl, whisk together the yogurt, almond milk, egg, egg whites, ghee, and erythritol. In a separate larger bowl, whisk together the oat bran, protein powder, baking soda and salt. Fold in the wet ingredients until just combined. Fold in the poppy seeds and lemon zest. 

  2. Heat a large skillet over medium heat. Spritz skillet with olive oil and, working in batches, drop ¼ cup batter into the pan. Cook until bubbles form on the surface of the pancakes, 2 to 3 minutes; flip and continue cooking until golden and firm, 1 to 2 minutes more. Serve with zero-calorie syrup or fresh fruit and plain yogurt.
