Description

These may be our favorite pancakes. The name suggests an extra grainy pancake and they deliver. After mixing the batter, you let it sit an hour so the mix can really blend and the powders can activate. We hope you love them as much as we do.

Ingredients

Instructions

  1. Combine the almond milk and coarse oat bran in a bowl, set aside.

  2. Sift together the oat bran flour, protein powder, baking powder, baking soda, erythritol and salt.

  3. In another bowl, whisk the egg and egg whites, then add the almond milk and vinegar and whisk together. Then whisk in the vanilla and the oil.

  4. Add the dry oat bran mixture to the wet ingredients and quickly whisk together. Do not overbeat. Fold in the coarse oat bran and almond milk mixture. Let sit for one hour, or refrigerate overnight.

  5. Spray a hot pan with cooking spray. Drop by ¼ cups onto the pan. Sprinkle a few blueberries on each pancake. Cook until pancakes begin to bubble, 2-3 minutes. Turn and cook for about 30 seconds on the other side. Remove from the heat, and continue until all pancakes are made.
