Description

  1. Spritz a large frying pan with enough of the olive oil to cover the pan. Heat pan to medium high. Add enough zucchini to cover the surface of the frying pan. You will work in batches.

  2. Cook zucchini until the bottom side is slightly browned, then flip. Salt cooked side lightly.

  3. After zucchini is brown on both sides, remove from the pan and place on several layers of paper towel to absorb excess oil.

  4. Work in batches until all zucchini is cooked and enjoy.
