Parmesan, Spinach, and Egg Casseroles
Description
We microwave some of the ingredients in this recipe to simplify and speed up the cooking process. Oven-baked egg casseroles in ramekins are a delight. And you get two! Enjoy.

Heat the oven to 500 degrees F / 260 C.

Spray four 6-ounce ramekins with olive oil cooking spray. Microwave onion, oil, and garlic in a large bowl, stirring occasionally, until onion is softened, about 5 minutes. Stir in cottage cheese, spinach, yogurt, nutritional yeast, Parmesan, egg, egg whites, salt, and pepper until well combined. Divide mixture evenly among prepared ramekins and place tomato slices over top.

Place ramekins into a larger baking pan so they aren’t touching. Bake 16 to 20 minutes. The eggs will finish cooking as they rest.

Remove dish from oven and transfer ramekins to a wire rack to stand and finish cooking, about 10 minutes. Serve immediately.
