Description

The variety of ingredients in this chicken salad its secret to success. Celery, onion, apple, and capers! If you're mad about pickle, feel free to toss it in. The lettuce cups make a little boat for easy mouth-delivery. You'll be full and avoid food coma altogether, while getting a nice protein bump. PCOS Nutrition made with love.

  1. Cook the chicken on a frying pan sprayed with cooking spray until cooked through but not dried out. Chop or shred the cooked chicken pieces when cooled. Put the cooked meat into a mixing bowl. Add the celery, onion, apple, and capers. 

  2. Blend together the yogurt and vinegar and add to the chicken mixture. Add salt, pepper, garlic powder, parsley and scallions and toss to blend. 

  3. Use the lettuce as the base to an open-faced sandwich, garnished, if desired, with pickle strips, radishes, cherry tomatoes or any garnish of your choice.
