Description

This citrus chicken dish packs one wallop of a protein serving at 58 grams. The dish itself isn't particularly sweet, but more wholesome and brothy. Pineapple is use to marinate the chicken for 15 minutes as a tenderizing agent. And it works! You're left with tender-to-the-fork chicken breast that feels like dark meat, while giving a fresh pineapple crunch on account of the raw pineapple and red onion salsa topping. Fantastic!   1. In a large bowl, stir together the erythritol, rice vinegar, Tamari, fish sauce, 1 tablespoon olive oil, salt, garlic powder, ground cayenne and black pepper. Transfer 1 tablespoon of this marinade mixture to a separate medium bowl and add the diced pineapple, red onion and cilantro. This is your salsa; toss until well mixed and set aside.

  2. Add the grated pineapple and its juices to the marinade mixture in the large bowl, then add the chicken and toss to coat. Set aside to marinate at room temperature for 15 minutes (and no longer).

  3. Once the chicken is done marinating, heat a large nonstick skillet over medium-high and add 1½ tablespoons of olive oil to coat the bottom of the pan. Add the chicken pieces in a single layer so that they don’t touch and let cook until the bottoms are cooked, 2 to 3 minutes. Dispose of any leftover marinade. Continue cooking, stirring occasionally, until browned on all sides and no longer pink on the inside, 4 to 5 minutes more.

  4. Mix in the Shirataki rice to warm it. Scoop onto plates and  top with the reserved pineapple salsa.

Don’t be tempted to over-marinate. Leave it too long and the chicken will fall apart and end up an unpleasant sticky texture.

The enzyme in pineapple, Bromelain, breaks down the connective tissues in chicken breasts making it more tender and more like dark meat.
