Description

We typically go for more Mediterranean diet style fats like olive oil. But on some treat days, we indulge in dishes where butter is indispensable. Namely anything picatta. This cauliflower picatta pairs roasty, toasty cauliflower fresh out of the oven with a glorious lemon, butter, caper sauce. Add chickpeas and make it a full vegetarian meal!   1. Heat the oven to 425 F / 218 C degrees. Place the cauliflower florets onto a sheet pan and drizzle with 2 tablespoons of olive oil. Season with kosher salt and black pepper, and roast for 20 to 25 minutes, until the cauliflower is golden and tender. Remove from the oven, add the chickpeas, if using, and toss to combine.

  2. Heat a medium skillet to medium-high. Add 1 tablespoon of olive oil and the shallot, and sauté until soft and fragrant, about 1 minute. Add the garlic and cook for 1 minute longer, stirring constantly to keep from scorching. Pour the stock into the pan and simmer until reduced by half, about 4 to 5 minutes. Reduce heat to low, then stir in the butter, capers, lemon zest and juice. Season with ½ teaspoon of kosher salt and a few turns of black pepper.

  3. To serve, place the cauliflower and chickpeas, if using, on serving plates. Top with the lemon-caper sauce. Top with parsley and serve with lemon slices.

Add the chickpeas to make this a fuller vegetarian meal. We leave them out when serving the cauliflower as a treat side. Alternatively, serve with Shirataki pasta, Shirataki rice, or tofu.

This picatta sauce is famously served with chicken or swordfish, so you can always repurpose it for a main meal with one of these proteins.

You can easily half the olive oil measure for this recipe and it will still be delicious, just a little less caloric.

This is a small vegetable serving. Instead of doubling the whole recipe, we’d recommend simply doubling the cauliflower ingredient to 2 heads. The rest of the ingredients can stay the same, and you can eat more if you have a big appetite.

If you want to cut down on the butter, you can easily omit it or cut it back and increase the veggie broth a little. This dish is a picatta, which is traditionally, lemony, capery, and of course, buttery. That’s also why it’s a treat meal veggie.
