Description

We intended this zucchini dish to be a dinner side, but it is very much an egg breakfast. Don't let the zucchini 'blanching' scare you off. Blanching is super-easy once you try it once and it's not time consuming as you can blanche lots of zucchini at once. The result is vibrant green, tender-cooked zucchini slices you can beautifully fan across the pan for an impressive presentation with very little work. Now, here's the good part: We loved this recipe and enjoyed it for several days in a row, warmed up in a frying pan. Not only that, our teenagers loved it and one even asked for the recipe.   1. Heat oven to 375 F / 190 C. Bring a large pot of salted water to boil. Add zucchini and blanch for 1 minute. Drain and spread zucchini out to cool on paper towels. Season lightly with salt and pepper.

  2. Beat egg and egg whites with almond milk and ¾ teaspoon salt, then add nutmeg, thyme and basil leaves.

  3. Spray a large, low-sided baking dish with olive oil spray, and arrange blanched zucchini across the bottom. Scatter cheese over zucchini, then pour in the egg mix.

  4. Bake for 35-45 minutes or until the egg is still a bit jiggly, but an inserted knife comes out clean. Cool to room temperature before serving.

Note

We mixed the almond milk and eggs with a mixer for almost 5 minutes to give it the best chance to achieve a custard-like consistency. Almond milk will never perform as well as regular milk when it comes to this.

This dish was initially intended as a side. But the serving is huge, so we reconsidered it as a breakfast. Of course, you can halve the serving size and enjoy it as a side as well. The eggs are light and smooth as in a flan. The cheese is an accent rather than a main event. Line up your zucchini rounds in the bottom for a presentation-worthy effect. A gorgeous and wholesome start to any day.
