Description

We hear from a lot of women who don't like eggs and they don't like oat bran, so we suggest protein pancakes. Yes, they're essentially made from oat bran, but with a little zero-calorie maple syrup, it feels different enough.

These are our super-simple blueberry pancake version when you don't feel like messing around too much, but you're ready to eat! PCOS Nutrition made with love.

Instructions

  1. Place a large skillet over medium high heat sprayed with olive oil cooking spray. Mix together oat bran and egg whites. Add the rest of the ingredients except blueberries. Stir in blueberries and let stand 10 minutes, then drop by ¼ cup scoops onto a hot pan. Cook on first side until pancake bubbles, then flip and cook until done. Repeat with remaining mixture.

    This is my go-to for blueberry pancakes. I usually eat half at breakfast and save the other half to have after my workout. Good and easy.
