When you want a meal that’s easy to make but tastes complicated, here’s your Huckleberry! Steak au Poivre is relatively quick to whip up thanks to the pairing with salad greens. The substitution of vanilla for bourbon in the sauce lends a soft note that may just have you going back for another spoonful of sauce.

Beef broth cuts down on the ghee needed to replace the tablespoons of butter normally featured in a Steak au Poivre recipe. But we keep the buttery flavor. As it is "Steak with Pepper," there is the addition of Sichuan pepper to the typical black pepper. But if you don't have it, you will still be delighted with simple cracked black pepper. The psyllium husk takes the place of cornstarch to keep your fat-free yogurt from separating. But it's just optics. This one's a winner!

Season steaks well on both sides with salt. Sprinkle black pepper and Sichuan pepper over both sides of steaks evenly and press the pepper into both sides with your hands. Let steaks sit for 10 minutes.

Mix ghee with ¼ cup of the beef broth. Put a large skillet over high heat. When the pan is hot, swirl ½ ghee mixture in the pan and add the steaks. Cook for 2 minutes on the first side until nicely browned. Flip and cook for 2 minutes more. Transfer steaks to a heated platter.

To make the sauce, add the rest of the ghee mixture to the pan. Add diced shallots and sauté for about a minute, stirring, until they begin to brown. Add broth and bring to a lively simmer. Add vanilla and continue to simmer until reduced by half, 3 to 4 minutes. Mix psyllium husk into yogurt (to keep the dairy from separating when cooking) and stir the mixture into the sauce.

Return steaks to the pan to warm them up, spooning sauce over them and turning once. Top plates of salad greens with the steaks and additional sauce.
