Description

Steak Diane is a classic recipe and the sauce is known for its buttery deliciousness. Here, clarified butter, or ghee brings the buttery taste without the buttery solids. Is it date night yet?

  1. Pound fillets a bit with a meat mallet. They should be about 1-inch thick. Sprinkle with salt and a lot of pepper. In a small skillet, add olive oil over medium-high heat. Sear steaks on both sides, just until browned, no more than 2 minutes each side. Remove from heat and set steaks aside. 

  2. Wipe pan clean and add ghee over medium heat, with shallots. Cook, stirring occasionally, until tender, about 2 minutes. Stir in mustard, Worcestershire and almond milk. Add some salt and pepper. Add salt & pepper to taste.

  3. As mixture simmers, return meat and meat juices to pan. Cook, turning two or three times, until meat is cooked to the temperature that you like. Remove to a plate, and add lemon juice, salt and pepper to taste. Spoon sauce over meat, garnish with chives or parsley, and serve.
