We have served this cauliflower soup at dinner parties and women are always asking us for 'that healthy veggie soup recipe their partners actually like.' Well, here it is - all 4 ingredients! Adjust the amount of stock added to make it thicker or thinner. The thicker version is more like healthy mashed potatoes. The thinner, soup version will warm you through and through. Perfect as a light lunch or as a side to your main protein.

  1. Garnish (optional)

    Preheat oven to 450 °F.  Toss cauliflower leaves with oil on a baking sheet; season with salt and pepper. Roast until browned, about 10 minutes. Garnish soup with cauliflower leaves before serving.

  1. Soup:

     In a medium saucepan, combine stock and cauliflower; season with salt and pepper. Bring to a boil; then reduce to a simmer. Cover and cook until cauliflower is very tender, about 20 minutes. Puree soup with an immersion blender until smooth, adding more stock as needed to achieve desired consistency. (Or puree in a regular blender, working in batches.)
