Swedish-inspired Cardamom Oat Bran Pancakes with Fruit & Nuts

Description

Many of the pastries you'll encounter in Swedish coffee shops are spiced with cardamom, a somewhat intense flavor often related in the US to Christmas cooking. We use 1/2 a teaspoon to keep it light, but if you love cardamom, go ahead and bump it up to a full teaspoon. Delicious, nutty, and fruity.

  1. Heat the oven to 200 degrees F / 93 C. Combine the oat bran flour, protein, oats, almonds, baking powder, cardamom and salt in a large bowl.

  2. In a separate bowl, whisk together the egg and almond milk; stir in the cooked oatmeal and the apricots until just incorporated. Add the oatmeal mixture to the dry ingredients and stir gently; don’t overmix. The consistency should be that of thick pancake batter; add a little more almond milk or ground oat bran as needed.

  3. Heat a large skillet over medium heat. When good and hot, spoon out the batter by ¼ cup. Cook until bubbles form and pancake edges dry, 2 to 3 minutes. Flip the pancakes and cook until they’re browned on the other side, a couple of minutes more. As they finish, transfer them to a plate in the oven while you cook the remaining batter. Serve with zero-calorie syrup.

Note

You can use more ½ teaspoon more cardamom if you like them spicier. 

If serving as a treat meal, you can use dried apricots in place of the fresh.
